Spicy porc Lab

Tonight for dinner I made a traditional Thai dish called “Lab” which is a spicy mince with lots of chili, coriander and lime that you put in lettuce leafs and then eat with your hands. Usually it’s made with chicken, but you can also use lamb or porc mince, which is what I used for mine.

In quite a lot of recipes you’ll find that they use rice, but I like my Lab better with rice noodles.

This is how I make it:

Fry some minced porc in a pan with a hint of sesame oil. Add some finely chopped peppers, onions, a little bit of fresh garlic and loads of fresh chili. When it’s cooked through, add some Thai fish sauce, plenty of lime juice and then lots of coriander.

Serve it in lettuce leafs along with the rice noodles, some toasted cashew nuts and some extra squeezed lime juice!
