Lemon and basil glazed monkfish with baby vegetables from the Marché Provençal

Went to the “Marché Provençal” market in Antibes which is situated at the Cours Massena. It’s a great little market where you can find everything from fresh fruits, to vegetables to meat and fish. The best Paté de Campagnarde I’ve ever had was actually bought at this market from the old man in the far end corner. I could seriously go and shop there everyday!

I really love cooking with baby vegetables because they’ve got such a rich taste and they look so cute when you serve them!

The lemon and basil glaze goes so well with the fish and vegetables, and to give the dish that little “extra” flavour, I sprinkled some smoked bacon.
