Roquette tagliatelle with tomato and fresh chili salsa, crispy pancetta and gorgonzola crumbles

I found this really nice fresh roquette tagliatelle at the little italian shop today and decided to make a tomato sauce I thought would go really well with the peppery rocket flavour. I started to fry some red onion with plenty of olive oil that I let caramelize along with some brown sugar. I then added some garlic, chili, crushed cherry tomatoes and finally some mature gorgonzola cheese that I also found at the shop. The cheese had the perfect texture; it was almost as it was melted already before I added it in my tomato sauce.

I let it all simmer to get that nice and thick texture, and then served it with my fresh pasta and crumbled some extra gorgonzola over as the final touch!
