Best meatball recipe ever!

I got the idea to put bacon and fresh thyme in the meatballs from my best friend back home, and decided to give it a try. The instance the aroma came out from frying the meatballs I knew that these were going to be gooooood… And indeed they were! Best meatballs ever!

Here’s the recipe: (for about 4 persons)

500 g of minced beef

1 packet of bacon

1 large onion

3 cloves of garlic

1 bunch of fresh thyme

1 dl good quality bread crumbs

2 dl cream

2 eggs

1/2 teaspoon of curry powder (gives the fried onion a wonderful taste)

2 tablespoons of brown sugar

salt and crushed black pepper

Here’s how you do it:

Chop the bacon in thin dices and fry in a pan with some olive oil and butter. When the bacon is almost done, add some finely chopped onions, garlic, thyme as well as the curry, salt and pepper and let it all brown. After it’s browned, add the sugar and let it caramelize.

In the meantime soak the breadcrumbs in the cream and leave it aside.

In a large bowl add the minced beef and combine with all the other ingredients. Add some extra fresh thyme and mix thoroughly. You need quite a lot of salt and pepper to bring out all flavours, and to be sure that you have put in enough, I always fry just one meatball to check. Taste and re season the mix if needed.

Start rolling your meatballs and fry them in salted butter for a few minutes depending of their size.

I serve my meatballs the traditional Swedish way with mashed potatoes, petit pois, cream sauce (that I make in the same pan I fried my meatballs in) and Swedish lingonberry jam. If you can’t find any lingonberry jam anywhere you can also use cranberry jam.
