Gravlax with elderflower vinaigrette

This is one of my favourite dishes! It’s so easy to make, tastes divine and is always very much appreciated on buffets or as a starter.

This is what you need:

* 2 sides of salmon (1kg each, will be enough for approximately 15-20 persons on a buffet)

*1 dl of sugar

*1 dl of salt

*1dl of elderberry lemonade

*20 black peppercorns

*5 spoons of good quality vodka

Here’s how you do it:

1.In a bowl, crush the pepper corns, then mix all ingredients above and put aside.

2.Clean the fish by removing all the bones, but keep the skin.

3.Use a large baking dish or container and put one fillet of salmon with its skin side down. Rub the mixture on the salmon and then put the other fillet on the top, with its skin side up. Pour the rest of the mixture, and rub it in. Cover with plastic, and put something heavy on it so the mixture really cures the fish.

4.Let it rest in the fridge for 2-3 days, but turn the salmon over and rub in all the juice 1-2 times per day.

5.The last day when it’s ready to serve, cut thin slices and serve it with olive oil and elderberry lemonade “vinaigrette”. Add some crushed black pepper and some nice sea salt.
