Pique-nique à la Garoupe

Just came back from a great afternoon pique-nique on the beach in la Garoupe, Cap d’Antibes. This is one of my favourite spots, and the water here is absolutely crystal clear!

With the current heat wave you don’t really want to eat anything other than a nice fresh salad for lunch, but after always getting dissapointed by all the crappy salads served here on the restaurants (a part from the salade Niçoise of course) I decided to make my own salad and bring to the beach. I made my grilled chicken salad with feta cheese, grilled apricots and avocado. As dressing I used some of the leftover tomato and chili jam (see recipe in previous post), and it went perfect with the salad!

A part from loads and loads of water, we also had a nice chilled bottle of Bandol. Best way to spend your sunday afternoon!

This is what you need for one big salad for two persons:

2 chicken fillets. (I sliced mine in stripes, put them in some chili and garlic marinade for a few hours, then grilled them quickly on the griddle pan)
A couple of handfuls of crispy rocket salad
6 apricots, halved then grilled
1 big avocado, sliced
1 block of feta cheese
1/2 red onion, finely sliced
A few spoons of tomato and chili jam
Sea salt and pepper
A little bit of good quality olive oil to drizzle over the salad
