Cannes film festival

Just finished a busy Cannes film festival where we catered for numerous film and production companies. As always during the film festival, the rain was pouring down, but everything turned out to be a success anyway! A big thank you to our very professional Scandinavian Catering service staff for all your hard work!

A big hit on one of the buffets was the grilled pepper and feta cheese “Tiramisu” with garlic croutons and fresh thyme (see photo below) So easy to make, and looked really cute as we served them in small individual glasses. Here’s the recipe along with some photos from our events;

For 4 persons:

1 block of feta cheese
2-3 table spoons of crème fraiche
Fresh thyme
Sea salt and crushed black pepper
1 yellow pepper
1 red pepper
Garlic croutons
Paprika spice

1.Crumble the feta cheese in a bowl. Add the crème fraiche along with the fresh thyme and salt and pepper. The feta cheese is quite salty as it is, so go easy on the salt. Mix into a smooth paste. If it’s too thick, just add a little bit more of the crème fraiche. Leave it for an hour to rest in the fridge.

2. Cut the peppers into small pieces. Grill them on a griddle and make sure you keep them quite crunchy. Leave them to cool.

3. In small shot glasses, put one layer with the feta cheese cream, some garlic croutons, then layer of grilled peppers. Do the same procedure over again. Finish the top with a layer of feta cheese and then dust some paprika spice on the top. Voilà!
