Scandinavian Cocktail

A few days ago we organized an afternoon cocktail for one of the biggest Swedish banks’ Private banking clients.
The guests enjoyed a typical Swedish canapé buffet with delicacies such as Gravlax, Reindeer, Scandinavian Seafood wrap and foie gras with cloudberry chutney.

We also had sweet canapés such as daim and dark chocolate truffles, lingonberry cake with cardamom frosting and elderberry panna cotta.

The smoked reindeer was incredible with a very rich smoky taste. To accompany this and to really enhance the flavour, I made some Swedish Västerbotten short bread with fresh thyme that I put the reindeer roses on,  then sprinkled some horseradish cream on top. They were a success. (See photo below)
