Château de Palayson Wedding

We just finished two very hectic months with weddings, dinner parties, bbq’s and cocktail parties. First up was a wedding for 80 guests at the beautiful Château de Palayson which is situated in Roquebrune-sur-Argens. Not only has this Château the most beautiful surroundings, but it has also received many awards for their great wine.

The ceremony took place in their incredible chapel among wine barrels, then canapés and Champagne in their beautiful gardens. The guests enjoyed lobster tartar with fresh strawberry vinaigrette and chili, asparagus arancinis with white truffle oil and foie gras with apple and cloudberry chutney with gold leafs.

As the bride and groom were Swedish they had a special request for a “Swedish platter” for entrée, so we did some “Västerbotten” cheese tarte, Scandinavian seafood salad with lemon and dill, spoon with “West coast” herring and a shot with “Nubberöra”  herring salad.

For main course they had fillet of beef with gratin dauphinois, Provençale crisp vegetables and jus, and for dessert special ordered macarons from the local bakery. As plating up warm food for 80 persons requirers quite the organisation, I didn’t get a chance to take any photos of this, but here are a few from the evening;
